Ingredients:
1 pound ham steak, cut into cubes
1 cup navy beans
1 medium onion, diced
1 cup chopped celery
1 cup sliced carrots
1 Tbsp. minced garlic
2 cups water
2 tsp. black pepper
2 tsp. cumin
1/4 cup fresh chopped cilantro
1/4 cup sour cream
Make Dinner:
Place cubed ham, dry navy beans, diced onion, celery, carrots, garlic, water, pepper and cumin in a slow cooker. Cook on low heat for 8-10 hours. When ready to serve, add fresh chopped cilantro to slow cooker. Mix well. Serve in large soup bowls topped with 3/4 Tbsp. sour cream.
Quick Tip: Chop vegetables the night before. Place chopped veggies and water in the slow cooker and store in the refrigerator over night. The next morning, remove from refrigerator, add remaining ingredients to slow cooker and turn it on. Dinner is done when you get home!
