Serves 6
Ingredients:
6 large Apple Chicken Sausages (We like Aidell's.)
1/2 cup milk
1 Tbsp. vinegar
2 cups all purpose flour
1 Tbsp. baking powder
1 tsp. garlic salt
12 Tbsp. very cold butter, diced into small cubes
1 egg
1 cup grated cheddar cheese
1 jalapeno, chopped, seeds and stem removed (optional)
Mustard
Ketchup
Make Dinner:
Preheat oven to 350 degrees. Combine milk and vinegar in a small mixing bowl. Mix well and set aside for 5 minutes. (Chef's Note: This process will create homemade buttermilk.) While milk is forming, blend flour, baking powder and garlic salt in a food processor. Add cold, diced butter and pulse 4-5 seconds to create a crumbly mixture. Add egg and buttermilk. Pulse another 3-4 seconds to form loose dough. Remove dough from food processor and place on a heavily floured board. Use a rolling pin to roll dough 1/4 inch thick. Press grated cheese and chopped jalapeno pieces into dough. Using a sharp knife, cut dough into six equal squares. Place one chicken sausage in the center of each square. Tightly roll dough from one corner to the other until sausage is completely wrapped. Place pigs in a blanket on a cookie sheet and bake at 350 degrees for 25 minutes until dough is golden brown. Serve with ketchup and mustard for dipping.
