10 corn tortillas
2 1/2 cups Colby Jack cheese
3/4 cup diced raw zucchini
3/4 cup diced white or purple onion
3/4 cup diced red pepper
To assemble quesadillas, place a single tortilla in a frying pan over medium heat. Top with 1/2 cup cheese. Top cheese with 2 Tbsp. zucchini, 2 Tbsp. onion and 2 Tbsp. red peppers. Top with second tortilla. Increase heat to medium high. Fry quesadillas for 3 minutes per side. Remove from pan. Allow to rest for 3-4 minutes before slicing. Use a pizza cutter to slice quesadillas into quarters. Top with remaining raw veggies.
