Serves 4
Ingredients:
1 pound medium shrimp, peeled and deveined
2 Tbsp. olive or coconut oil
1 Tbsp. minced garlic
2 cups sweet corn kernels (We like Trader Joe's Organic Sweet Corn found in the freezer section.)
1 cup shell off edamame (This can also be found frozen at Trader Joe's)
1 cup chopped crimini mushrooms
2 Tbsp. lime juice
1 tsp. sea salt
1 tsp. black pepper
1 tsp. sweet paprika
1/4 cup fresh grated parmesan cheese
Make Dinner:
Heat oil in a large sauté pan over medium heat. Add garlic and sauté for 2 minutes. Add corn and edamame. Sauté another 8 minutes, stirring often. Add mushrooms. Increase heat to medium high. Add peeled shrimp, lime juice, salt, pepper and paprika. Sauté another 5 minutes until shrimp are pink and cooked through. Serve immediately topped with grated parmesan cheese.
