Ingredients:
1 pound boneless ahi tuna steaks
1/2 cup Italian bread crumbs
1 egg
1/4 tsp. garlic salt
1 tsp. olive oil (Coconut oil is also great.)
1/2 tsp. lemon juice
5 whole wheat hamburger buns
Tartar sauce
2 Tbsp. chopped green onions
Make Dinner:
Heat an indoor grill, such as a George Foreman, to medium high heat. (Chef's Note: If an indoor grill is not available, a nonstick frying pan will also work well.) Cut ahi tuna steaks into cubes and place into a blender along with breadcrumbs, egg, garlic salt, olive oil and lemon juice. Pulse for 10-15 seconds until smooth. Form mixture into 5 equal patties. Grill patties 5 minutes per side. Serve on warm hamburger buns topped with tartar sauce and chopped green onions.
Crispy Onion Rings
1 very large sweet onion (We like Walla Walla Sweets.)
1 cup flour
2 eggs
2 cups Panko bread crumbs
3 cups canola oil
Salt
Peel onion and slice horizontally into 1/2 inch sections. Use fingers to gently separate the individual rings of each section. Place flour in a small mixing bowl. In a separate mixing bowl, beat eggs until smooth using a whisk. Place Panko bread crumbs in a third mixing bowl. Heat oil in a large frying pan over high heat. Dip onions slices first in flour, thoroughly coating each. Then, dip each ring into raw egg and then directly into Panko bread crumbs, using hands to press crumbs to onion rings. Immediately drop rings in hot oil. Reduce heat to medium high. Fry onion rings for 2-3 minutes per side. Remove from oil and drain on paper towels. Sprinkle with salt to taste and serve immediately.
