Ingredients:
2 pounds boneless, skinless chicken breast tenderloins
2 cups pecan pieces
1 1/2 cups flour
1 tsp. salt
1/2 tsp. black pepper
1 tsp. onion powder
2 eggs
Cooking spray
Make Dinner:
Preheat oven to 350 degrees. Place pecans and flour in a blender and pulse for 5-6 seconds until a fine meal has formed. Remove from blender and place in a medium mixing bowl. Add salt, pepper and onion powder. Gently mix with a fork. In a small mixing bowl, beat eggs with a wire whisk until smooth. Dredge chicken pieces in raw egg, then pecan flour. Spray a large cookie sheet with cooking spray. Place chicken on cookie sheet and spray top of chicken with cooking spray as well. Bake at 350 for 30 minutes until crispy and golden brown.
Patriotic Fruit Skewers
1 medium seedless watermelon
1 1/2 pounds blueberries
12 wooden skewers
1 star shaped cookie cutter, 1-2 inches in diameter.
Slice watermelon into 1/2 inch slices. Use cookie cutter to cut watermelon into star shapes. Gently thread watermelon stars and blueberries onto wooden skewers, alternating to create a pattern. Chill skewers until ready to serve.
