10 oz. beef chorizo
6 slices 100% whole wheat bread
12 eggs, beaten
2 cups milk
2 cups shredded Cheddar cheese
Preheat oven to 350 degrees. Spray a 13 x 9 rectangular baking dish with cooking spray. Set aside.
In a large frying pan over medium heat, fry chorizo, stirring often, until sausage begins to 'dissolve'. Add three beaten eggs to pan and sauté until mixture is crumbly. While chorizo is cooking, tear sliced bread into 1/2 inch pieces. Line bottom of prepared baking dish with bread pieces. Top bread with chorizo crumbles. Beat remaining 9 eggs in a medium mixing bowl. Add milk and stir to combine. Pour eggs and milk atop chorizo. Top evenly with shredded cheese. Cover baking dish with aluminum foil and bake for 45 minutes at 350 degrees. Remove foil from pan and continue to bake another 5 minutes until eggs are cooked through and cheese is golden brown.
