Serves 5
Ingredients:
1 pound lean ground beef
1 Tbsp. minced garlic
1 26 oz. jar marinara sauce
3 1/2 cups water
1 tsp. salt
1 cup polenta
Cooking Spray
1 cup shredded mozzarella cheese
Make Dinner:
Brown ground beef and garlic in a large skillet over medium high heat, stirring often, until beef is cooked through, about 7 minutes. Add marinara sauce and reduce heat to medium. Bring sauce to a boil and reduce heat to low.
While sauce is cooking, bring water to a boil over high heat in a deep saucepan. Add salt and polenta and reduce heat to medium low. Use a long handled wooden spoon to stir polenta until soft, about 15 minutes.
Spray a 9 inch pie plate with cooking spray. Pour hot polenta into pie plate and let it cool for 15 minutes. The polenta will set as it cools. When ready to serve, invert pie plate and remove polenta onto a large serving plate. Top with marinara and shredded cheese. Slice into wedges and serve.
