Ingredients:
2 pounds cod fillets (Any whitefish will do.)
1/4 cup olive oil
3 Tbsp. minced garlic
2 tsp. dill
2 tsp. salt
6 fresh basil leaves (optional)
5 Roma tomatoes, diced
2 tsp. curry powder
1/2 cup plain Greek yogurt
Make Dinner:
Heat 2 Tbsp. olive oil in a large frying pan over medium heat. Add 1 Tbsp. minced garlic and sauté for 3 minutes. Add fish to pan. Season with dill and 1 tsp. salt. Add basil leaves to pan and cover. Reduce heat to medium low. Simmer fish for 4-5 minutes per side until just cooked through.
While fish is cooking, heat 2 Tbsp. olive oil in a medium saucepan over medium heat. Add 2 Tbsp. garlic and diced tomatoes. Bring to a low boil and add 1 tsp. salt and curry powder. Stirring often, simmer for 10 minutes. Remove from heat and add Greek yogurt. Stir well until sauce is creamy. Spoon sauce over cod and serve.
