30 minutes prep + 30 minutes cook time
Serves 5-6
Ingredients:
5 pounds chicken legs
2 1/2 cups soy sauce
2 Tbsp. sesame oil
2 Tbsp. wine vinegar
1 tsp. sugar
1 cup diced mango
1 cup crushed pineapple
Make Dinner:
Combine soy sauce, sesame oil, vinegar, sugar, mango and pineapple in the blender. Pulse until smooth, about 10 seconds. Pour mixture over chicken legs in a large mixing bowl. Cover and refrigerate for 30 minutes to marinate chicken.
Preheat BBQ grill to medium high. Grill chicken for 10-12 minutes per side until cooked through. While chicken is cooking, heat remaining marinade in a small saucepan over medium heat. Bring to a boil and reduce heat to medium low. Simmer sauce for 5-6 minutes to cook proteins from chicken completely. Serve chicken with extra sauce for dipping along with fresh fruit and vegetables. (We like fresh mango and grilled corn on the cob.)
