Ingredients:
2 pounds boneless rib eye steak
3 Tbsp. coconut oil (Olive oil works well too.)
1 large onion
1 large green pepper
1 medium sized beefsteak or heirloom tomato
1 Tbsp. cumin
1 Tbsp. garlic salt
1/2 Tbsp. black pepper
1 Tbsp. paprika
Corn or flour tortillas
Make Dinner:
Preheat oven broiler to high. Chop steak, onions, peppers and tomatoes into 1/2 inch pieces. In a large cast iron skillet, melt coconut oil over medium high heat. Add peppers and onions and sauté until vegetables begin to soften. Add steak. Season dish with cumin, garlic salt, black pepper and paprika. Mix well. Sauté for 8-10 minutes until beef is just cooked through and vegetables are soft. Add tomatoes and place pan under oven broiler for 3-4 minutes. Serve fajitas smoking hot in warmed tortillas.
