5 Ribeye Steaks
Salt and pepper
1/2 pound lump crab meat
4 raw egg yolks
2 Tbsp. lemon juice
1 stick butter (1/2 cup), melted
1 tsp. salt
Preheat BBQ grill to medium high. Season steaks with salt and pepper. Grill steaks to taste, 5-6 minutes per side for medium.
While steaks are cooking, use a wire whisk to beat egg yolks and lemon juice in a metal mixing bowl until yolks are thick, about 5 minutes. Bring 2 cups of water just to a boil in a medium sauce pan. As soon as water boils, reduce heat to medium low. Place metal bowl on top of pan to heat egg mixture. Do not allow eggs to cook! Stirring constantly, drizzle melted butter into egg mixture. Remove from heat, add salt and mix well.
Top each steak with a heaping tablespoon of crab meat. Drizzle with hollandaise sauce. Serve immediately.
