5 minutes prep, 8 hours cook time
Serves 6
Ingredients:
1 5 pound boneless pork shoulder roast, fat removed
1 medium onion, rough chopped
1 Tbsp. minced garlic
1 can of diced tomatoes
1 16 oz. bottle BBQ sauce (We like a honey based sauce to sweeten things up.)
1 cup water
Make Dinner:
Chop pork roast into 2 inch chunks. Place pork, onion, garlic, tomatoes, BBQ sauce and water in a slow cooker,. Stir to combine. Cook on low for 8-10 hours. (Just enough time to go to work and return to a delicious smelling house!)
After 8-10 hours, remove roast from slow cooker and place on large cutting board. Using two forks, pull pork apart into shredded pieces. Serve on onion rolls with BBQ baked beans and fresh fruit. (Chef's Note: We serve extra BBQ sauce on the side for those who like it a bit saucier.)
