Serves 4
Ingredients:
1 pound boneless, skinless chicken breast
2 Tbsp. butter
2 Tbsp. olive oil
1/4 cup lemon juice
1 Tbsp. garlic salt
1 tsp. black pepper
1 cup chopped lettuce
1/2 cup diced tomatoes
4 slices pita bread
Tzatziki sauce (Recipe Below)
Make Dinner:
Chop chicken breast into bite size pieces. In a large saute pan, heat butter and olive oil over medium high heat. (Chef's Note: The mixture is important as the butter gives the dish more flavor but the olive oil keeps it from burning.) Add chicken. Squeeze lemon juice over chicken. Add garlic salt and pepper and mix well. Saute chicken over high heat until golden brown, about 10 minutes. To assemble gyros, place 1/4 of the chicken on a warm slice of pita bread. Top with 1/4 cup chopped lettuce and chopped tomatoes. Drizzle with Tzatziki Sauce. Serve warm.
Tzatziki Sauce
1 8 oz. container Greek yogurt
1 cucumber, diced and seeds removed
3 Tbsp. lemon juice
1 Tbsp. minced garlic
1 1/2 Tbsp. salt
1 tsp. pepper
1 tsp. dill
Place all ingredients in a blender or food processer. Pulse until smooth and creamy. Serve over Chicken Gyros. (Chef's Note: This is also a great salad dressing!)
