Serves 4
Ingredients:
4 apples, sliced 1/4 inch thick (We like Granny Smith or Fuji apples best.)
3 Tbsp. butter
1/4 cup lemon juice
1/4 cup sugar
2 Tbsp. water
4 pork chops, bone in
1 cup Italian salad dressing
Make Dinner:
Begin making the Carmelized Apples as they have a slightly longer cooking time than the pork. In a large saute pan, melt butter over medium heat. Add apple slices. Saute apples in butter for 5 minutes. Add lemon juice and sugar. Mix well. Continue to saute apples, stirring often for 15 minutes. Increase heat to medium high and add water. Continue to saute apples another 5 minutes until golden and carmelized.
While apples are cooking, pour 1/2 cup Italian salad dressing into the bottom of a heavy frying pan. Place pork chops on top of dressing and heat to medium high. Add another 1/2 cup salad dressing on top of chops. Continue to roast pork chops, uncovered, over medium high heat until cooked through, 5-7 minutes per side. Serve with Carmelized Apples.
