8 oz. orzo pasta
1 pound kielbasa sausage, sliced 1/4 inch thick on the diagonal
1 zucchini, sliced 1/4 inch thick
1 yellow squash, sliced 1/4 inch thick
1 roma tomato, diced
Sweet Mustard dressing (recipe below)
Boil 2 quarts of water in a large saucepan. Add 1 Tbsp. salt. Add orzo pasta and cook according to package directions, about 9 minutes. When pasta is cooked al dente, remove from heat.
While pasta is cooking, heat a large cast iron skillet over medium high heat. Add kielbasa sausage and sauté for several minutes. Add zucchini and yellow squash. Sauté for 10 minutes until vegetables are soft.
Combine orzo pasta and sausage mixture in a large mixing bowl. Add diced tomatoes and Sweet Mustard dressing. Toss gently to combine. Serve immediately.
Sweet Mustard Dressing
1/3 cup olive oil
1 Tbsp. dijon mustard
1 tsp. sugar
2 Tbsp. apple cider vinegar
1 tsp. salt
1 tsp. black pepper
Combine all ingredients in a small mixing bowl and whisk to combine. Pour over Orzo Pasta Salad and toss to coat.
