Ingredients:
4 pork steaks, bone in
2 cups whole wheat flour (if you only have white flour, use it)
1 Tbsp. onion powder
1 Tbsp. garlic salt
1 tsp. black pepper
2 Tbsp. olive oil
Pan Gravy (recipe below)
Fresh rosemary for garnish
Pan Gravy
2 Tbsp. butter
2 Tbsp. whole wheat flour
1 1/2 cups lowfat milk
Make Dinner:
In a medium mixing bowl, blend flour with onion powder, garlic salt and pepper. Heat oil in a large cast iron skillet over medium heat. Dredge pork chops in flour mixture and place in frying pan. Increase heat to medium high and fry pork chops until golden brown and cooked through, 5-7 minutes per side. Remove pork chops from pan and reduce heat to medium low. We will use the meat drippings in the pan to make the Pan Gravy.
Place 2 Tbsp. butter in pan and allow it to melt completely before adding flour. Quickly blend the butter and flour with pan drippings to create a thick paste. Add 1/4 cup milk and stir constantly to combine. As mixture becomes creamy, add another 1/4 cup of milk. Continue to add milk, 1/2 cup at a time stirring constantly. Mixture will thicken and become smooth. Serve gravy over pork chops. Sprinkle with fresh rosemary and a crisp green salad.
