Ingredients:
3 pounds boneless honey ham (We like Jennie O Turkey Ham.)
3 pounds sweet potatoes
1/4 cup butter
1 tsp. salt
1 tsp. black pepper
1 cup 100% real maple syrup
2 Tbsp. lemon juice
Make Dinner:
Preheat oven to 425 degrees. Place ham in an 8 x 8 baking pan. Cover with aluminum foil and place in hot oven. While ham is roasting, peel sweet potatoes and chop each into quarters, lengthwise. Chop each quarter into 1/2 inch pieces. In a large cast iron skillet, melt butter over medium heat. Add sweet potatoes, salt and pepper. Saute for 15 minutes. Remove from heat and add maple syrup and lemon juice. Stir to combine. Place cast iron skillet into oven with ham and bake for 20 minutes. Serve with a fresh green salad made with romaine lettuce, bitesize carrots and pomegranate seeds. (Chef's Note: We serve our salad with a tangy vinaigrette dressing. It's the perfect accent to the saltiness of the ham and the sweet maple potatoes.)
