1 pound ground Italian sausage
1 8 oz. package manicotti pasta
16 oz. skim milk ricotta cheese
1 Tbsp. onion powder
2 Tbsp. Italian Seasoning
2 24 oz. jars marinara sauce
3 cups grated mozzarella cheese
In a large skillet, brown Italian sausage over medium high heat until cooked through, about 10 minutes. Drain oil from sausage and set sausage aside to cool.
While sausage is cooking, bring 5 quarts of water to a boil. Add manicotti pasta and cook according to package directions, about 7 minutes. Drain pasta.
In a large mixing bowl, mix ricotta cheese, onion powder and Italian seasoning. Add cooked Italian sausage and mix well to combine.
Preheat oven to 375 degrees. Spray 11 x 11 baking dish with cooking spray. Use fingers to stuff each manicotti tube with ricotta mixture, about 1/4 cup per tube. Place each tube in baking dish. Cover with marinara sauce and top with grated cheese. Bake for 15 minutes until cheese is golden and bubbly. Allow to cool for 5 minutes before serving.
