Ingredients:
6 boneless, skinless chicken breasts
Salt and pepper
2 Tbsp. olive oil
2 Tbsp. butter
6 slices crispy bacon
6 slices swiss cheese
6 100% whole wheat sandwich buns
1/2 cup ranch dressing (We like Trader Joe's Parmesan Ranch.)
Crisp iceberg lettuce
Sliced tomatoes
Make Dinner:
Heat olive oil and butter in a large frying pan over medium high heat. Season whole chicken breasts with salt and pepper to taste and add to hot pan. Saute chicken until cooked through, about 15 minutes, turning once halfway through cooking time. Add 1 slice of cheese to each chicken breast and place bacon atop cheese. Cover pan and reduce heat to medium. Cook another 5 minutes allowing cheese to melt. While chicken is cooking, spread 1-2 Tbsp, ranch dressing on each whole wheat bun. Place on chicken breast on each bun. Serve with crisp iceberg lettuce, sliced tomatoes and dill pickle spears.
