1 pound Italian sausage
8 oz. penne pasta
1 jar marinara sauce (We like Trader Joe's Organic Marinara.)
1 15oz. can organic pureed pumpkin
1/2 cup water
Grated parmesan cheese
Bring 3 quarts of water to a boil in a large pasta pot. Boil penne pasta according to package directions, about 12 minutes. In a large frying pan, brown Italian sausage over medium high heat. When sausage is cooked through, about 10 minutes, drain oil from pan. Add marinara sauce and canned pumpkin to frying pan. Stir well to combine. Simmer sauce for 10 minutes. Add water to thin sauce. Add penne pasta to sauce and stir to combine. Serve immediately topped with freshly grated parmesan cheese.
