Ingredients:
5 pound pork tenderloin
3 pounds red potatoes, chopped
1 pound baby carrots
4 Tbsp. Mrs. Dash Tomato Basil Garlic Seasoning
2 Tbsp. garlic salt
2 Tsp. black pepper
Caprese Salad (recipe below)
Make Dinner:
Preheat oven to 350 degrees.Place pork tenderloin in center of large roasting pan (11 x 17 minimum). Arrange chopped potatoes and carrots around roast. Sprinkle roast with Mrs. Dash seasoning. Sprinkle entire dish with salt and pepper. Place roast in oven and bake until meat thermometer reads 71 degrees Celsius, about 90 minutes. Serve roast pork and vegetables with Caprese salad.
Caprese Salad
2 ripe Roma tomatoes, sliced
2 medium green tomatoes, sliced
3/4 pound mozzarella cheese, sliced
2 Tbsp. extra virgin olive oil
2 Tbsp. dried oregano
2 tsp. salt
2 tsp. pepper
Arrange sliced tomatoes and cheese on large platter, alternating cheese and tomatoes to make a pattern. Drizzle olive oil over tomatoes and cheese and sprinkle with oregano, salt and pepper. Serve immediately.
