1 medium spaghetti squash
1 pound ground Italian sausage
1 jar marinara sauce (We like Trader Joe's Organic Marinara)
1 cup mozzarella cheese
Cut spaghetti squash in half and remove seeds using a large metal spoon. Place on a microveable plate and microwave on high for 7 minutes or until squash is soft throughout. While squash is cooking, saute Italian sausage in large frying pan. In a separate saucepan, heat marinara sauce. When sausage is brown, drain oil and add sausage to marinara sauce. Remove squash from microwave. Allow to cool for 5 minutes. Use a fork to pull pieces of squash from shell. The squash will pull apart resembling spaghetti pasta. Place 1/4 of the squash on each plate. Cover with sausage/marinara mixture. Place 1/4 cup mozzarella cheese on top. Serve immediately.
