Serves 10-12
Ingredients:
1 12 oz. package Jumbo shell pasta (We like Barilla!)
32 oz. low fat ricotta cheese
2 eggs
2 Tbsp. garlic salt
4 tsp. black pepper
2 Tbsp. dried oregano
2 Tbsp. parsley
24 oz. marinara sauce (We like Trader Joe’s Organic Marinara Sauce)
1 pound grated mozzarella cheese

Make Dinner:
Preheat oven to 350 degrees. Boil pasta in large pot of water according to package directions, about 12 minutes. While pasta is cooking, mix ricotta, eggs and all spices in a large mixing bowl. Set aside. When pasta is ready, drain and rinse with cold water for a few moments to cool and to keep pasta from sticking. Spray a large 9 x 11 baking pan with cooking spray. Layer cooked pasta shells closely together in baking pan. In each shell, scoop 2 Tbsp. of ricotta cheese mixture. Continue until all shells have been stuffed. Cover all shells with marinara sauce and a generous layer of mozzarella cheese. Cover pan with aluminum foil and bake for 15 minutes at 350 degrees. After 15 minutes, turn oven heat up to 475 degrees. Remove foil and bake for another 10 minutes uncovered until cheese is bubbly. Serve with green salad and Italian bread.
