-One package Kirkland brand Three Cheese Tortellini (found in the refrigerated section at Costco)
-1 ½ cups TerraFina Wild Smoked Salmon Dip and Spread (found in the refrigerated section at Costco in a 24 oz. container)
-2 Tbsp. butter
-2 Tbsp. flour
-2 ½ cups lowfat milk
-2 cups + 1/2 cup Colby Jack cheese, shredded
-1 tsp. garlic salt
-1 large lime, cut into wedges
Make Dinner:
Fill a large stockpot 3/4 of the way full with water and bring to a boil over high heat. Add Kirkland brand Three Cheese Tortellini and boil according to package directions, about 5 minutes.
While pasta is cooking, melt butter in a large saucepan over medium heat. Add flour and stir constantly with a wire or silicone whisk. When thick paste forms, add ½ cup milk. Stir constantly. Simmer for 3 minutes until sauce thickens and begins to bubble slightly. Add another ½ cup milk. Stir for 3 minutes until bubbly. Add another ½ cup milk and 2 cups of cheese. Stir sauce to melt cheese. As sauce begins to thicken, add garlic salt. Reduce heat to low and add another 1/2 cup of milk. Simmer sauce for another 5 minutes over low heat. Add 1 ½ cups TerraFina Wild Smoked Salmon Dip and Spread to mixture. Stir well to fully incorporate salmon into sauce. Add last ½ cup of milk to sauce and blend until combined.
Drain water from tortellini and add pasta to sauce. Stir gently to cover all pasta with sauce. Remove from heat. Serve pasta with lime wedges.
