Ingredients:
3 Tbsp. coconut oil
2 pounds of boneless, skinless chicken
breast
1 red pepper, 1 yellow pepper
1 large purple onion
1 large tomato
2 Tbsp. cumin
2 Tbsp. garlic salt
1 Tbsp. black pepper
2 Tbsp. paprika

Make Dinner:
Chop chicken, peppers, onions and tomatoes into 1/2 inch pieces. In a large castiron or heavy skillet, melt coconut oil. Add peppers and onions and saute over high heat until onions begin to soften. Add chicken. Sprinkle cumin, garlic salt, black pepper and paprika over mixture. Saute for 15 minutes over high heat or until chicken is cooked through and vegetables are soft. Add tomatoes and cook another 5 minutes. Serve fajitas smoking hot in warmed corn tortillas.
