5 minutes prep + 6 minutes cook time
2 pounds jumbo sea scallops
1 pound sliced bacon
2 Tbsp. olive oil
1/2 Tbsp. minced garlic
2 Tbsp. fresh parsley, chopped (optional)
Preheat oven broiler to high. Combine olive oil and garlic in a small mixing bowl. Wrap each scallop with one slice of bacon. Secure with a wooden toothpick. Place wrapped scallops on a broiler pan. Brush each scallop lightly with garlic oil. Broil for 6-8 minutes until bacon is crisp. Top with fresh parsley and serve immediately.
