1 10 inch deep dish prepared pie crust
5 Roma tomatoes, sliced 1/4 inch thin
1 1/2 cups fresh basil leaves
1 pound sliced mozzarella cheese
Preheat oven to 400 degrees. Fill bottom of pie crust with a single layer of sliced tomatoes. Top tomatoes with a layer of fresh basil leaves and top with a single layer of sliced mozzarella. Top cheese with another layer of tomatoes, basil and cheese in that order. Repeat two more times to create four layers, finishing with a final layer of cheese.
Bake pie for 25 minutes at 400 degrees until crust is golden brown and cheese is bubbly. Allow pie to rest 10 minutes before slicing. Serve with fresh fruit.
