30 minutes prep + 20 minutes cook time
Serves 5
Ingredients:
4 pounds boneless, skinless chicken thighs
1 cup brown sugar
1/2 cup ketchup
1/2 cup soy sauce
2 Tbsp. sherry (If you can't find it use wine vinegar.)
2 tsp. freshly grated ginger
1 Tbsp. minced garlic
Make Dinner:
Combine brown sugar, ketchup, soy sauce, sherry, ginger and garlic in a large mixing bowl. Mix well until sugar begins to dissolve. Add chicken and marinate for 30 minutes. (Chef's Note: Chicken can be marinated for 8-10 hours for maximum flavor.)
Preheat BBQ to medium high. Grill chicken for 8-10 minutes per side until cooked through. (Chef's Note: For the most even cooking, arrange chicken on BBQ such that each piece is cooked over both direct and indirect flame so the sugar in the marinade does not burn.)
Serve chicken with fresh seasonal fruits and vegetables and steamed rice if desired.
