Ingredients:
6 pork steaks, bone in
2 Tbsp. lime juice
2 Tbsp. Hawaiian sea salt
2 Tbsp. pepper
1 yellow squash, sliced into wedges
1 zucchini, sliced into wedges
12 corn tortillas
1 lime, quartered
Make Dinner:
Cut yellow squash and zucchini into wedges. Set aside. To prepare pork steaks and vegetables, combine sea salt and pepper. Squeeze lime juice and sprinkle seasoning evenly over vegetables and pork. Heat BBQ to medium high. Place pork on direct heat on one half of grill. Grill for 8 minutes on each side, turning once. Place squash and zucchini on other side of grill. Grill for 5 minutes on each side, turning once. Remove pork and vegetables from grill. Place corn tortillas on grill and lower heat to medium low. Grill tortillas for 5 minutes on each side or until crispy. This will allow the meat to rest keeping the juices sealed in. Remove tortillas from heat and immediately squeeze with fresh lime. Serve tostadas with pork steaks and vegetables.
