Ingredients:
16 oz. canned or fresh cooked salmon
2 eggs
1 cup Panko bread crumbs
1/2 cup green onions, chopped
2 tsp. garlic salt
2 tsp. dill
1 tsp. black pepper
2 Tbsp. coconut oil
Make Dinner:
Place salmon in a large mixing bowl. Remove any bones, if desired. (Chef's Note: Salmon bones are edible and are an excellent source of calcium.) Add eggs, bread crumbs, onions, garlic salt, dill and black pepper. Blend all ingredients. Use hands to create salmon patties, 1/2 inch thick. In a large frying pan, heat coconut oil over medium heat. Fry patties until golden brown, approximately 6 minutes on each side. Serve with a fresh green salad.
