Ingredients:
1 1/2 pounds white fish (We prefer Red Snapper, but tilapia, cod or swai will all work well.)
1 1/2 cups flour (We prefer whole wheat flour.)
1 Tbsp. baking powder
2 Tbsp. Old Bay Seasoning
12 oz. beer (Use your favorite and drink the rest with dinner!)
6 cups canola oil
French Fries
3 large russet potatoes
6 cups canola oil

Make Dinner:
Begin cooking french fries first as they have a longer cooking time than the fish. In a large saucepan or heavy frying pan, heat oil over high heat. Peel and chop potatoes into strips. Place potatoes into hot oil. Reduce heat to medium high. Fry for 12-15 minutes until golden brown. Remove from oil, drain on paper towels and salt immediately. Serve while hot.
While fries are cooking, heat oil for fish in a large frying pan over medium high heat. Cut fish into strips. In a medium mixing bowl, combine flour, baking powder, Old Bay and beer until smooth. Batter will be thick. Dip fish into batter and immediately place in hot oil. Fish should sizzle when placed into oil. Fry fish for 3-4 minutes per side, longer for thicker pieces. When fish is golden brown, remove from oil, drain on paper towels. Salt immediately. Serve with fresh lemon or lime wedges, malt vinegar and salt.
