Ingredients:
1 pound mild Italian sausage
1 Tbsp. flour
3 cups half and half
1 dozen shucked oysters
1/4 cup chopped green onions
Make Dinner:
Brown Italian sausage in a large dutch oven over medium high heat until cooked through, 5-6 minutes. Drain all but 2 Tbsp. of oil from sausage. Sprinkle sausage with flour and mix well. Add half and half and bring just to a boil, stirring often. Add oysters. Reduce heat to medium and simmer until oysters begin to curl, about 10 minutes, continuing to stir frequently. Serve Oyster Stew topped with freshly chopped green onions and a side of oyster crackers (of course!)
