Serves 4
Ingredients:
1 pound ground beef (For a perfect burger, use an 80/20 blend.)
1 Tbsp. ketchup
1 Tbsp. yellow mustard
1 tsp. salt
1 tsp. onion powder
4 slices sharp cheddar cheese
4 whole wheat buns
8 slices crisp bacon
Chipotle Cream (recipe to follow)
Make Dinner:
Place ground beef, ketchup, mustard, salt and onion powder in medium mixing bowl. Use hands to blend ingredients and form four equal hamburger patties. Heat a large frying pan over medium high heat. Fry burgers until brown, 3-5 minutes per side. (A George Foreman grill or outdoor BBQ are also great choices.) Place 1 slice of cheese on each burger. Cover pan and cook for another 3 minutes allowing cheese to melt.
Spread Chipotle Cream on both sides of four whole wheat buns. Place each burger on a bun and top with 2 slices of crisp bacon. Serve with tortilla chips (perfect for dipping in chipotle cream) and crisp dill pickles.
Chipotle Cream
16 oz. light sour cream or greek yogurt
1 7 oz. can chipotle peppers in adobo sauce (These are found in the Latino section of your local grocery store.)
1 1/2 Tbsp. garlic salt
1 1/2 Tbsp. lime juice
Combine all ingredients in blender and blend until smooth. Use as a spread for Bacon Chipotle Cheeseburgers and as a dip for chips and veggies. Caution: It's extremely addictive!
