1 head romaine lettuce, chopped into bitesize pieces
1 medium purple onion, diced
2 roma tomatoes, diced
1 can garbanzo beans
1 cup chopped summer sausage (Salami is great too, but summer sausage is cheaper!)
Mustard Vinaigrette (recipe below)
Arrange lettuce on large serving platter. Place sausage, garbanzo beans, tomatoes and onions in individual sections atop lettuce for presentation. When ready to serve, toss salad with Mustard Vinaigrette.
2 Tbsp, minced garlic
2 Tbsp. lime juice
1/2 tsp. black pepper
1/2 tsp. salt
1 Tbsp. Dijon mustard
2 tsp. Worcestershire sauce
1/2 cup olive oil
Place all ingredients except olive oil in the blender or food processor. Pulse until smooth. Drizzle oil in gradually while pulsing to create a creamy texture.
