5 pounds chicken pieces (Breasts, legs, thighs on the bone)
1 Tbsp. sea salt
Mrs. Dash Salt Free Tomato Basil Seasoning
Boil chicken for 20 minutes in large stock pot of water. Add sea salt to water to season chicken. After 20 minutes, remove chicken from water and allow to cool for five minutes. (Do not discard water! We will use it to add amazing flavor to our pasta.) Sprinkle chicken generously with Mrs. Dash Salt Free Tomato Basil Seasoning. While chicken is boiling, heat BBQ to medium high. Place chicken on BBQ and grill for 7 minutes per side.
Tomato Basil Butter Sauce
1 stick butter
6 Roma tomatoes, chopped
1 1/2 cups finely chopped fresh basil
1 Tbsp. minced garlic
3 tsp. salt
1 tsp. pepper
While chicken is cooking, chop tomatoes and basil. Melt butter in medium saucepan and add tomatoes, basil, garlic, salt and pepper. Saute sauce for 10 minutes over medium hight heat. Reduce heat to low and simmer until chicken is removed from the BBQ.
1/2 pound (1/2 box) Orzo pasta
While chicken is on the BBQ, add pasta to chicken stock (the water in which the chicken was boiled). Bring to a boil and cook according to package directions, about 9 minutes. Drain pasta. Add 1/2 cup of tomato basil butter sauce to Orzo pasta and mix thoroughly.
Serve chicken on a bed of Orzo topped with Tomato Basil Butter Sauce.
