Ingredients:
1 pound salmon fillet
Juice of 1 lime
1 Tbsp. sea salt
1 tsp. black pepper
2 tsp. paprika
1 Tbsp. minced garlic
2 Tbsp. coconut oil
To prepare salmon, squeeze with fresh lime juice. Sprinkle with sea salt, pepper and paprika. Spread minced garlic evenly over salmon fillet. Heat oil in a large skillet over medium heat. Place salmon fillet in hot oil and cook for 7 minutes on each side or until salmon is cooked through. Do not overcook or salmon will be dry. Serve with homemade mashed potatoes and green salad.
Homemade Cheesy Mashed Potatoes
4 large russet potatoes
2 Tbsp. butter or margarine
1/2 cup nonfat milk
1/2 cup cheddar cheese
To make mashed potatoes, peel potatoes. Chop into 2 inch pieces and boil in 6 cups of boiling water for 15 minutes. Drain water and use a hand mixer to mash potatoes while still hot. Add butter, milk and cheese. Mix thoroughly until cheese is melted and potatoes are creamy.
