Serves 4
Ingredients:
2 Tbsp. butter
2 Tbsp. olive oil
1 cup minced purple onion
2 Tbsp. minced garlic
2 Tbsp. lemon juice
2 tsp. salt
2 tsp. pepper
2 Tbsp. dill weed
2 cups half and half
1 1/2 cups grated parmesan cheese
8 oz. smoked salmon
8 oz. linguine pasta
Make Dinner:
Bring 6 quarts of water to a rolling boil in a medium pasta pot. Add linguine pasta and cook according to package directions, 7-10 minutes. Drain pasta.
While pasta is cooking, heat butter and olive oil over medium high heat in a large saute pan. Add onion, garlic, lemon juice, salt, pepper, and dill. Saute for 10 minutes until onions begin to soften. Add half and half and parmesan cheese. Reduce heat to medium and bring just to a boil. Simmer for 5 minutes, stirring often. Add smoked salmon, mixing well. Add pasta and toss to combine. Serve with a pinch of fresh parmesan on top.
