Recipe #112: Cobb Salad with Buttermilk Ranch Dressing

Christmas shopping got you running around? Don't let the hustle and bustle get in the way of dinner. Tonight we have a lightning fast meal to make sure you have plenty of sustenance for all of your holiday plans. We start with crisp romaine lettuce and top it with fresh boiled eggs, sharp cheddar cheese, diced tomatoes and crisp bacon. This delicious salad is great as a stand alone meal or the perfect dish for a holiday potluck. We top it with our own Buttermilk Ranch Dressing or use your own favorite salad dressing. No matter how you use this salad, it's a quick and easy solution to dinner on a busy Friday night during the holidays!

15 minutes
Serves 4

Ingredients:
4 eggs
1 pound bacon
1 head romaine lettuce, chopped
3 roma tomatoes, diced
2 cups grated cheddar cheese
Buttermilk Ranch Dressing (Recipe Below)

Make Dinner:
In a medium saucepan, bring 6 cups of water to a boil. Boil eggs for 7-10  minutes. Set aside to cool. While eggs are cooling, fry bacon over medium heat in a large skillet until crisp. Drain on paper towels. Wash and dry lettuce. Place 3-4 cups of lettuce on each of 4 plates. Top each plate of lettuce with 1/2 cup diced tomatoes, 1/2 cup cheddar cheese, 1 sliced boiled egg and 4-5 slices of crumbled bacon. Serve with Buttermilk Ranch Dressing.

Buttermilk Ranch Dressing
3/4 cup buttermilk (Chef's Note: If you don't have buttermilk, combine 2 Tbsp. vinegar with 3/4 cup milk in a small mixing bowl. Stir and let rest for 3 minutes. It will create homemade buttermilk.)
 3 tablespoons sour cream
 2 tablespoons mayonnaise
 1 teaspoon dill
 1 Tbsp. minced garlic
 1/2 teaspoon dijon mustard
 2 tsp. salt
 2 tsp. pepper

Place all ingredients in a blender or food processor. Blend until smooth.
