Ingredients:
2 red peppers, seeds and stems removed
2 yellow peppers, seeds and stems removed
1 large onion, peeled and chopped
2 Tbsp. olive oil
5 Italian sausage links (We like Sweet Italian Turkey Sausage.)
5 Italian sandwich rolls
3/4 cup grated Monterey jack cheese
Make Dinner:
Preheat oven broiler to high. Slice peppers and onions into 2 inch long slices. Heat olive oil in a large frying pan over medium heat on the stovetop. Add peppers and onions and sauté for 10 minutes. Add Italian sausage links to pan and sauté another 10 minutes until sausages are cooked through. (Chef's Note: Sausages can also be grilled for 5-7 minutes per side on an indoor or outdoor grill over medium heat.)
Place 2 Tbsp. peppers and onion mixture in the bottom of each sandwich roll. Top with 1 sausage link per sandwich. Place another 2 Tbsp. peppers and onions atop sausage. Top with 2-3 Tbsp. Monterey jack cheese and place sandwiches on a cookie sheet. Place sandwiches under oven broiler for 3 minutes until cheese is melted.
