Ingredients:
Cooking spray
1 dozen large eggs
1 tsp. salt
1 tsp. pepper
1 cup crumbled feta cheese
1/2 cup sliced olives
1 cup diced tomatoes
Make Dinner:
Prepare omelette pan with cooking spray and heat over medium heat. Whisk eggs in a medium mixing bowl. Add salt and pepper and pour 1/4 of egg mixture into omelette pan, spreading them so they fill the pan completely. Do not stir. Allow eggs to cook for 5 minutes over medium heat. When the eggs are firm on the bottom, but still slightly runny on top, add 1/8 cup feta cheese, 2 Tbsp. olives and 1/8 cup tomatoes to eggs. Reduce heat to medium low and cook for 2-3 more minutes. Using a spatula, gently flip the omelette to the other side and continue to cook for another 3-5 minutes. Transfer omelette from pan to plate. Fold each omelette in half and top with another 1/8 cup feta cheese, 2 Tbsp. olives, and 1/8 cup diced tomatoes. Repeat process to create 4 omelettes. Serve hot with fresh whole wheat toast.
