Ingredients:
1/2 cup corn meal
1/2 cup flour
2 tsp. baking powder
1 egg
1/2 cup milk
1/2 tsp. salt
1/4 tsp. pepper
1 package mini smoked sausages (We use Hickory Farms Lit'l Smokies.)
4 cups canola oil

Veggie Pasta Salad
2 cups elbow macaroni
1/2 cup chopped celery
1/2 cup finely chopped carrots
1/2 cup chopped green onions
2/3 cup mayonnaise
2 tsp. garlic salt
2 tsp. black pepper
Bring 4 quarts of water to a boil in a medium pasta pot over high heat. Add pasta and reduce heat to medium high. Boil pasta according to package directions, about 10 minutes. While pasta is cooking, chop celery, carrots and green onions. Drain pasta and place pasta and veggies in medium serving bowl. Add mayonnaise, salt and pepper. Stir to combine.
Make Dinner:
In a medium mixing bowl, combine cornmeal, flour, baking powder, egg, milk, salt and pepper. Use a whisk to combine ingredients and form batter. Set aside and heat oil in large frying pan over medium high heat until it reaches 375 degrees. Dip sausages, one by one, into batter and place into hot oil. Fry Corn Dog Bites for 1-2 minutes per side until golden brown. Remove from oil and drain on paper towels. Serve hot with ketchup and mustard for dipping.
