Serves 6
Ingredients:
1 1/2 pounds boneless, skinless chicken (Breasts or thighs are both great.)
1/2 cup water
1 Tbsp. minced garlic
2 cups ketchup
2 Tbsp. Worcestershire Sauce
2 Tbsp. red wine vinegar
2 tsp. cumin
2 tsp. salt
2 tsp. black pepper
6 whole wheat buns
Lime Coleslaw (Recipe Below)
Make Dinner:
Place chicken, water, garlic, ketchup, Worcestershire Sauce, vinegar, cumin, salt and pepper in a slow cooker. Mix well. Cook on low heat for 8 hours. When chicken is cooked through, remove from sauce and pull apart using two forks. Return shredded chicken to BBQ sauce. Serve atop whole wheat buns topped with Lime Coleslaw.
Lime Coleslaw
6 cups shredded cabbage
1 cup low fat mayonnaise
3 Tbsp. lime juice
2 tsp. salt
1 tsp. black pepper
2 tsp. onion powder
Blend all ingredients in a large mixing bowl. Mix well to coat cabbage thoroughly with lime dressing. Top BBQ Chicken Sandwiches with slaw to taste.
