Ingredients:
1 pound lean ground beef
1 pound ground pork
1 Tbsp. minced garlic
2 Tbsp. ground oregano
2 Tbsp. ground basil
1 1/2 Tbsp. garlic salt
2 tsp. black pepper
8 oz. Ciliegine (These are small balls made of mozzarella cheese. We found ours at Trader Joes.)
1/2 cup canola oil
16 oz. marinara sauce (We like Trader Joe's Organic Marinara.)
1 cup grated mozzarella cheese
Make Dinner:
Preheat oven to 375 degrees. Blend ground beef and pork in a medium mixing bowl. Add garlic, oregano, basil, garlic salt and pepper. Mix well. Form ground meat into 1 1/2 inch round balls. Add 1 piece of Ciliegine (mozzarella cheese balls) to the center of each meatball. Form the meat around the cheese to cover it completely. Heat oil in a large frying pan over medium high heat and fry meatballs for 15 minutes. Be sure to turn meatballs frequently to keep them from sticking. When brown on all sides, remove from oil and drain on paper towels.
Place meatballs in a large pie dish. Cover completely with marinara sauce. Top with grated mozzarella cheese. Bake for 25 minutes at 375 degrees until cheese is melted. Serve with a fresh green salad and dressing of your choice.
