Ingredients:
1 pound boneless, skinless chicken breasts
2 Tbsp. olive oil
2 Tbsp. minced garlic
2 Tbsp. lemon juice
2 tsp. salt
2 tsp. pepper
1 1/4 cups chopped Romaine lettuce
3/4 cup Caesar salad dressing
1 cup grated parmesan cheese
5 flour tortillas
Make Dinner:
Chop chicken breasts into bite size pieces. Heat oil in a large frying pan over medium high heat. Add garlic and sauté 2-3 minutes. Add chicken, lemon juice, salt and pepper. Sauté until chicken is cooked through, about 10 minutes.
While chicken is cooking, toss chopped lettuce with Caesar dressing and grated parmesan in a medium mixing bowl. Heat tortillas in the microwave for 1 minute to soften. Place 1/2 cup chicken and 1/4 cup lettuce mixture in the center of each tortilla. Wrap tortillas to contain ingredients. Serve with fresh fruit.
