Ingredients:
2 pounds medium shrimp, peeled and deveined
3 eggs
2 cups Italian breadcrumbs
2 tsp. cayenne pepper
4 cups canola oil
1 cup low fat mayonnaise
1 Tbsp. hot sauce
1 tsp. black pepper
1/4 cup chopped green onions
2 1/2 cups shredded romaine lettuce
2 roma tomatoes, sliced
5 hoagie rolls
Make Dinner:
Beat eggs in a small mixing bowl and set aside. Combine breadcrumbs and cayenne pepper in a separate medium mixing bowl and mix well. Heat oil in a large frying pan over medium high heat. While oil is heating, dip shrimp in eggs and then breadcrumbs. Fry shrimp in oil 2-3 minutes until golden brown. Remove shrimp from oil and drain on paper towels.
While shrimp is cooking, combine mayonnaise, hot sauce, black pepper and chopped green onions in small mixing bowl. Spread 2 Tbsp. of spicy mayo on each hoagie roll. Layer 3-4 slices of tomato on each roll. Top with 1/2 cup shredded lettuce. Top lettuce with 1 cup shrimp. Serve sandwiches with extra hot sauce to taste.
