Ingredients:
5 large flour tortillas (burrito size)
3/4 cup low fat mayonnaise
2 tsp. ketchup
2 tsp. mustard
1/4 cup diced red pepper
5 large romaine lettuce leaves
3/4 cup diced roma tomatoes
1/2 pound deli turkey
1/2 pound deli ham
5 slices provolone cheese
Make Dinner:
Combine mayonnaise, ketchup, mustard and diced red pepper in a small mixing bowl. Heat tortillas for 30 seconds in the microwave to make them pliable. Spread 2-3 Tbsp. of mayonnaise mixture evenly on each tortilla. In the center of each, place a large lettuce leaf. Top with 2 Tbsp. diced tomatoes. Place 2 slices of turkey and 2 slices of ham on top of the lettuce and tomatoes. Top with 1 slice of provolone cheese. Beginning on one side, tightly roll the tortilla, carefully securing the ingredients as you roll. Place the roll seam side down and slice with a serrated knife into 3/4 inch slices. Serve sandwiches with fresh fruit (We like organic strawberries!).
