Ingredients:
5 yams
3 pounds boneless sirloin pork chops, fat trimmed
8 cups Kellogg's Corn Flakes cereal
2 eggs
1 cup soy sauce
1/2 cup honey
1/2 cup brown sugar
1 Tbsp. minced garlic
2 Tbsp. lime juice
1/4 cup diced green onions
Make Dinner:
Preheat oven to 350 degrees. Pierce each yam with a fork 10-15 times. Bake yams for 55 minutes until soft and cooked through.
While yams are cooking, beat eggs in a small mixing bowl. Set aside. Place corn flakes in the blender. Pulse until finely chopped, about 10 seconds. Pour cereal crumbs into a medium mixing bowl. Dip pork chops in beaten egg and then corn flake crumbs, covering pork chops completely. Place coated chops on a large cookie sheet. Bake for 40 minutes until pork is cooked through and golden brown.
During the last 10 minutes of cooking time, prepare sauce for chops. Combine soy sauce, honey, brown sugar, minced garlic and lime juice in a small sauce pan over medium heat. Bring just to a boil. Reduce heat to low and simmer for 4-5 minutes.
Spoon sauce over pork chops and top with a sprinkling of green onions. Serve with roasted yams.
