10 minutes prep + 8 hours cook time
Serves 5
Ingredients:
1 5 pound boneless chuck roast
2 Tbsp. sea salt
2 tsp. black pepper
1 cup red wine
1 large onion, chopped
5 red potatoes, chopped into 1 inch pieces
3 large carrots, peeled and chopped into 1 inch spears
1 Tbsp. minced garlic
2 tsp. dried thyme
2 1/2 cups water
Make Dinner:
Season roast with 1 Tbsp. salt and 1 tsp. black pepper. Place in slow cooker. Add red wine. Top with onions, potatoes, carrots, garlic, remaining salt and pepper and dried thyme. Add water. Cook on low heat for 8-10 hours. Serve with a loaf of hot French bread.
