Ingredients:
Fried Chicken
2 pounds boneless, skinless chicken tenderloins
2 eggs
2 cups Italian breadcrumbs
4 cups canola oil
2 tsp. sea salt
Waffles
4 cups sifted, all purpose flour
3 tsp. baking powder
1/4 cup sugar
1/2 tsp. salt
3 cups milk
3 eggs, separated
1 tsp. vanilla extract
3/4 cup chopped pecans
2 Tbsp. melted butter
100% real maple syrup
Make Dinner:
Begin by preparing chicken. Heat oil in a large frying pan over medium high heat. While oil is heating, beat eggs in a small mixing bowl. Set aside. Place Italian breadcrumbs in a separate medium mixing bowl. Dredge chicken tenderloins first in beaten egg, then in breadcrumbs, until thoroughly covered. Fry chicken in hot oil 5-6 minutes per side. Remove chicken from oil and drain on paper towels. Sprinkle with sea salt.
While chicken is cooking, prepare waffle batter. In a medium mixing bowl, combine flour, baking powder, sugar and salt using a wire whisk. In a small mixing bowl, combine milk, egg yolks and vanilla. Mix well. Add milk and eggs to flour mixture and whisk thoroughly until creamy. Using a hand mixer on its highest speed, beat egg whites in a separate mixing bowl until stiff peaks form, about 3 minutes. Add chopped pecans and melted butter to waffle batter and mix well. Lastly, fold beaten egg whites into batter using a rubber spatula.
Preheat waffle maker and pour 3/4 cup of waffle batter into maker at a time. Cook according to waffle maker directions, about 4-5 minutes. Serve hot waffles topped with fried chicken and real maple syrup to taste.
